Etymology & Components

The Chinese word 酱油 (jiàngyóu) for soy sauce is composed of two characters: 酱 (jiàng) and 油 (yóu). 酱 originally meant "fermented bean paste", and is derived from the character 醤 (jiàng), which was used in ancient China to refer to a type of fermented sauce made from soybeans. The character 油 (yóu) originally meant "oil", and was used to refer to the liquid that was extracted from soybeans during the fermentation process. Over time, the term 酱油 came to be used specifically for soy sauce, as it is known today.
