The Chinese word 火腿 (huǒtuǐ) for "ham" is a compound of two characters: 火 (huǒ), meaning "fire", and 腿 (tuǐ), meaning "leg". The character 火 refers to the traditional method of preserving ham by smoking it over a fire, while the character 腿 simply refers to the part of the pig that is used to make ham.The earliest recorded use of the word 火腿 dates back to the Song Dynasty (960-1279), when it was used to refer to a type of ham that was produced in the city of Jinhua in Zhejiang Province. Jinhua ham is still considered to be one of the best hams in China today, and it is known for its unique flavor and aroma, which are said to be the result of the special climate and water quality in the Jinhua region.The word 火腿 is also used in other languages to refer to ham, such as in Japanese (ハム, hamu) and Korean (햄, haem).
